Lola’s favorite chicken mushroom broccoli bake INGREDIENTS: 2 cups white rice (quinoa and brown rice works as well) 2 small cans 98% fat free cream of mushroom soup 1 head of broccoli, chopped small 1/2 yellow onion, diced small 3 cloves garlic, minced 1 1/2 cups frozen or fresh peas 3 boneless, skinless chicken breasts 1 cup grated cheddar cheese 2 tablespoons olive oil 1 lemon Salt, pepper, smoked paprika Preheat oven to 350 degrees. Prepare rice or quinoa as directed. About 2 cups is enough for this casserole which fills a 9 X 13 inch baking dish. In a sauté pan, add olive oil, garlic, chicken breasts, and season both sides with salt, pepper, and smoked paprika. Sear both sides on high heat, then lower heat, add juice of one lemon, cover pan and cook until done and juices run clear (about 20 minutes). Dice chicken into bite sizes and set aside. In the same pan, add onion, broccoli, peas, and a 1/2 cup water to deglaze the pan and steam veggies till they are tender but still have a slight crunch. To do this heat on medium, cover with lid, open to stir occasionally. Mix all ingredients together in baking dish with both cans of cream of mushroom. Season to taste, spread evenly in dish, place in oven to cook together for 25-30 minutes. Take out and add grated cheddar on top, place back in for last 5-7 minutes until golden brown. It’s not a pretty dish. But it’s loaded with fiber and protein. And it gets my picky 9 year old to eat 3 veggies she never would on her own. Heyyyyyyy Chicken Fajita Lunch Bowls! 👋 Let's start this weekend off with a big bowl of color 🌈. Rice, chicken and crunchy veggies + a 'fajita' vinaigrette = my kind of lunch 😍 . ⠀ CHICKEN FAJITA LUNCH BOWLS (serves 4)⠀ ------------------------------- 2 chicken breasts⠀ 1 tablespoon olive oil⠀ salt & pepper⠀ 3/4 cup basmati rice (uncooked)⠀ 2 bell peppers, sliced into strips⠀ 2 tablespoons red onion, diced⠀ 1 cup corn kernels⠀ .⠀ Vinaigrette⠀ 1 teaspoon chili powder⠀ 1/2 teaspoon paprika⠀ 1/2 teaspoon ground cumin⠀ 1 tablespoon sugar⠀ 1 tablespoon lime juice⠀ 1/4 teaspoon salt⠀ 3 tablespoons olive oil⠀ 3 tablespoons white wine vinegar⠀ .⠀ DIRECTIONS⠀ ---------------⠀ Chicken:⠀ Pre-heat oven to 425°F.⠀ Place the chicken breasts in a small baking dish, sprinkle with salt and pepper, and drizzle with olive oil. Turn to coat.⠀ Bake for 10 minutes, turn the chicken, then bake for another 10-15 minutes (depends on the size of your chicken breasts), until cooked through.⠀ Allow to rest for 10 more minutes before slicing.⠀ .⠀ Lunch Bowls:⠀ Cook the rice according to package directions. Allow to cool.⠀ In a large bowl, combine the rice, bell peppers, red onion and corn.⠀ Shake together the vinaigrette and add to the bowl.
